City Chow Cafés Certified By Green Restaurant Association

The Green Restaurant Association (GRA), a national non-profit organization, provides services in research, consulting, education, marketing and community organizing. The GRA utilizes a collaborative strategy that involves restaurants, manufacturers, vendors, grassroots organizations, government, media, and restaurant customers. The GRA's model provides a convenient way for all sectors of the restaurant industry, which represents 10% of the U.S. economy, to become more environmentally sustainable.

What we've done:

Over the last 5 months we have been working with The Green Restaurant Association to allow the City Chow Cafes to become Certified Green Restaurants. We're happy to report that we were certified on Friday, June 13.

In order for us to be a certified Green restaurant we must change 4 of our practices to 'green alternatives'. Each year, to remain certified, we must commit to 4 more.

Here's what we've done so far, which improve the environment while maintaining the same quality our customers have grown accustomed to.

  1. We put low-flow Faucet Aerators on our dish and hand sinks. We reduced the flow of water and thus save water when we wash our dishes, utensils and containers and hands. The normal flow of water is 5-6 gallons per minute for the dish sink. The low Flow Aerators drop this number to 1.5 gallons per minute. The normal flow of water for Hand sinks is 5-6 gallons, the Aerators dropped it to a 1/2 gallon per minute.
  2. We switched our Napkins to 100% recycled content. With every 500 cases used we will save:
    • 20.30 cubic years of landfill space
    • 47,250 gallons of water
    • 27,625 kilowatts of energy
    • 405 pounds of air pollutants
  3. We introduced products that are manufactured with Corn instead of Plastic. The Corn products are used for our Parfait Cups. This product is bio-degradable.
  4. We have introduced recycling. We sort out paper, glass and trash.

At all Blue Radish Group cafés, we're gradually adding healthy and organic food to our menu because we believe that whole and less processed food is better for you and tastes better. As USDA organic products become more affordable and readily available, we will happily make them part of our menu. Two examples of this are the addition of USDA organic, coffee and USDA organic salad dressing, both of which represent a small part of our overall step toward Green!
